This one is super quick and easy and I usually bust it out during the week when I have about 30 minutes or so to get dinner ready. For this meal, I always use my small 6-cup rice cooker. This thing is awesome. If you don’t have one, stop what you are doing and go get one. I’ll wait…
OK, now we can get started.
Here is what you’ll need:
1 1/4 tsp Sugar
2 Tbsp soy sauce
2 tsp ginger (I usually buy the kind in the tube)
1 Tbsp butter
3 eggs; beaten
2 Tbsp olive oil
1 clove minced garlic
1 tsp dried red pepper flakes
2 sliced green onions
2 cups cooked brown rice
1 cup cooked lean hamburger (93% lean is fine)
1 small onion, chopped
Here is what to do:
1. Cook the rice in the slow cooker or as directed on the box if you did not buy the aforementioned awesome rice cooker.
2. In a small container, mix the sugar and soy sauce and set aside.
3. Heat the butter in a small skillet and cook the scrambled eggs. Set them aside.
4. In a medium-sized pan, fry the hamburger.
5. To the almost fully cooked hamburger, add the oil, onion, ginger, garlic, and pepper and fry until onion is soft and hamburger is done.
6. Add the cooked rice and green onions and stir.
7. Stir in the soy mixture, eggs, and green onion and serve right away.
