This seems like just a bunch of random stuff in a skillet with smoked sausage slapped on top of it, basically because that’s exactly what it is, and it’s just as good as it sounds.
Here’s what you’ll need:
12 to 16 oz of beef smoked sausage
1 large sliced onion
1 Tsp minced garlic
1 Tbsp vegetable oil
1 med apple, cored and chopped
1 Tsp Rosemary – dried
3/4 Tsp Dried Sage
1 can diced tomatoes in juice (14.5 oz)
1 can Great Northern Beans (15 oz)
1 cup chicken broth
1 1/2 Tbsp Tomato paste
1 1/2 Cups croutons, seasoned
1/3 cup chopped parsley
Here’s what to do:
Grab a large heavy skillet, one that would break a toe if dropped from waist-high, and heat up your oil. Saute the onion and garlic over a medium-high heat. Add the apple, herbs, tomatoes, beans, broth and tomato paste. Continue stirring until it is all blended. Add the sausage and bring it all to a boil. The cover it, reduce to a simmer and let it simmer for 20-30 minutes until heated through. When you serve it, add the croutons and parsely. This stuff is gold Jerry, pure gold!
