To tell the truth, I was never much of a tomato soup guy. I always thought canned soup was kind of bland. Homemade soup however, is pretty darn good, so I would suggest giving this one a try if you are curious.
Here’s what you’ll need:
2 28oz cans of crushed tomatoes
2 cups of Chicken broth
1 shallot
half of a diced onion
3 cloves of diced garlic
2 Tbsp olive oil
1 cup of cream
3 Tbsp sugar
pepper to taste
Here’s what to do:
1. In a large pot saute the onion, garlic, and shallots in olive oil. Saute until the onion is soft.
2. Add the tomatoes and sugar. Boil and then simmer for about 10 minutes.
3. Stir in the broth and then remove from heat and let it cool down a little.
4. Take a small amount of soup at a time and blend in a food processor until smooth. Pour the processed soup until a different bowl until you have run it all through the food processor. When it is done, put it back in the pot.
5. When you are ready to serve the soup, put it on medium heat and stir in the cream.
Very good with some parmesan or crackers.
